State Aroma
New Mexico is the first state in the nation to have its own official aroma: green chiles roasting in the fall.
On March 28, 2023, Governor Michelle Lujan Grisham, signed Senate Bill 188 making the aroma of green chile roasting adopted as the official aroma of New Mexico.
